  1. 4 Eggs: Big- Separated (Yolks & White) & set aside each of them separately
  2. To Taste Salt
  3. 1 Cup Fresh Onion Birista
  4. 200-250 gms Plain Yoghurt + 1/2 tsp Sugar: Well Whisked
  5. 3-4 Tempering Spices: Green Cardamoms
  6. 4-5 Cloves
  7. 1 inch Cinnamon Stick
  8. 1 Onion: Finely Chopped or Pasted
  9. 1 tbsp (2 G) Paste: Ginger-Garlic Paste: (This recipe traditionally doesn’t call for this particular ingredients paste however, I preferred using it in it)
  10. as required Water (Hot)
  11. 1 tbsp Black Peppercorns: Freshly Cracked
  12. 1 tsp Dry Roasted Cumins & Whole Dry Red Chilli Powder: Homemade
  13. 1 tsp Garam Masala Powder: Homemade
  14. 1/4 Cup Ghee/Cooking Oil or Both: For Cooking this particular Recipe- (This recipe calls for it entirely, however I’ve mixed in both the ghee & cooking oil in it all along)
  15. 3-4 Green Chillies: Slit

Instructions to make to make Dimer Shashranga/Egg Shashrang: A Bangladeshi Delicacy & A Lost

  1. Firstly: The Egg Yolks & Whites need be separated & very carefully set aside for its later use, as & when required-
    Now, well whisk the Egg Whites with some salt & white peppers until nicely frothy-
    Then, heating up a frying pan & adding into it some oil/ghee or both
  2. ☝️Shallow fry the Egg Whites Omelettes & once done, divide them into a few pieces (not to worry about their shapes & sizes) as it’d be immersed into the gravy only- Prepare the plain yoghurt as well, by whisking it sufficiently with some sugar as mentioned above to set aside for the time being 👇🏻
  3. Next: Transfer them into a separate plate/dish & set aside for its later use in the recipe-
    Add in some more admixture of both oil & ghee- Throw in the thinly sliced onions to it & sauté nicely until dark golden browned all over but not burnt anyway- Set Aside 👇🏻
  4. Now, in the same frying pan add in some more admixtures of both ghee & oil as this particular recipe calls for the same a bit more than any usual such recipes that we already know about-
    Add into it, the Tempering Spices now & sauté for sometime until it turns fragrant
  5. Time to add in the onions paste to it- Sauté, until they become translucent- Make sure to not brown them anyway- Add in some salt & black peppers to it at this point, while sautéing nicely- Add in the 2G Paste now as well as some slitted green chillies & sauté continues until the raw smell goes off the pastes & gravy mixtures, completely- Add in some splashes of warm water to it for a much better sautéing purpose
  6. Once sautéing is done nicely- Add in the Egg Whites Omelettes pieces to it & gently mix everything together, add in some more warm water for the gravy consistency & gently mix nicely to get well blended & incorporated-
    Flame to be kept at the medium-low at this point & it need be slow cooked
  7. After sometime the Egg Yolks to be very carefully & gently slid into this thick gravy mixture ensuring that they’re all intact & not damaged by any chance-
    Don’t use any spoon or spatula at this stage by any means- Cover it & let it slow cook for the next 20 mins time without using any spoon or spatula for the first 10-12 mins during this time
  8. After 10-12 mins time carefully once very gently holding your pan with two hands shake it very gently a few times for the entire thing inside it to be well combined & incorporated-
    Uncover now once & very gently using a wooden or silicone spoon/spatula give it all a very gentle yet good mix as the yolks have all hardened by now, no need to flip it over at all
  9. Add in the Birista now, Garam Masala & the Bhuna Masala Powders, a little more black peppers & a couple of tbsps of raw ghee on the top, Cover it back-Flame goes off- It needs to be kept at its standing position for another 10-15 mins time before serving it piping hot with equally hot steamed rice- Yes,
